Have Your Cake and Eat it Too

Yum!

1 1/4 cups coconut flour (can get it at Whole Foods or at Shaws in their organic section)
3/4 cup maple syrup
1 egg
1/3 cup unsweetened cocoa powder
1 tsp baking soda
1/2 tsp salt
1 cup warm water
1 tsp vanilla extract
1/3 cup oil (your choice)
1 tsp distilled white or apple cider vinegar


Preheat the oven to 350 degrees.
Mix all dry ingredients together
Mix all wet ingredients together and then mix the wet and dry.


Put into an 8x8 cake pan and bake for 30 min or when knife comes out clean. 


NOTE: You can omit the egg, and then make these into bite size fudge pieces and put in the freezer. SO GOOD.
