Some more great summertime recipes

Is the heat getting to anyone else? I find that I used to LOVE it, but now (as I get older do I dare say?) that it is making me a bit loopy, tired and dehydrated! How in the world did I used to go to the beach and drink beer all day with no sunscreen on?
Ahhhhh..... youth! LOL.

So here are some good, healthy eats for the hot weather.

Tomato Watermelon salad

1/2 watermelon cubed
2 large tomatoes, cut into about 1-inch pieces
4 oz goat cheese, crumbled
1.5 tbsp extra-virgin olive oil
1/2 cup diced fresh basil
1/4 cup diced fresh mint

How to Make It
1.) Place watermelon and tomatoes in a bowl.

2.) Crumble cheese over the top.

3.) Drizzle with olive oil.

4.) Season with salt and pepper.

5.) Toss gently and top with basil and mint.

Delicious, easy and great for the muggy weather.


Here is another one.


Banana chocolate ice cream

3 large ripe bananas
3/4 cup unsweetened rice milk
3 TB 100% maple syrup (or other sweetner of your choice)
3 TB Raw Cacao pwder

Put in blender until smooth and either put it through an ice cream maker if you have one, or simply put in the freezer for a couple of hours. YUM!
