Chocolate banana zucchini cake

Can something healthy taste good too? Even with this mish mash of ingredients? It is actually pretty damn good!

Chocolate banana zucchini cake- 2 zucchini
- 1/4 cup coconut oil
- 4 eggs
- 2 bananas (VERY ripe)
- 1/2 cup coconut flour
- 1/2 cup cocoa powder
-1/2 cup 100% maple syrup
- 1 tsp baking powder
- 2 tsp cinnamon
- 1/2 tsp nutmeg
- 1 tsp powdered ginger

1. Preheat oven to 175 degrees Celsius and line a round cake tin with parchment paper.
2. Fineley shred the zucchini in a food processor or on a grater, and squeeze them in a kitchen towel to remove most of the water.
3. In a food processor, combine all other ingredients and process for about 20 seconds.
4. Add zucchini and process until well combined.
5. Pour the mixture in the prepared cake tin and bake for 40-45 minutes until a knife inserted into the center comes out clean.
6. Let cool and serve with some coconut cream on top. Enjoy
