Fresh and Delicious Recipes

It has been a little while since I posted a recipe, and these are really tasty - and if you know me - EASY.

All the first one takes is a blender.

Tomato Sauce

4 medium sized tomtatoes
10 fresh leaves of basil
1/8 cup olive oil
1/8 cup water
2 large figs
2 cloves garlic (or I used 1/2 Tbsp of garlic powder)
12 sun dried tomatoes
2 tsp sea salt

While you are chopping up the tomatoes and getting the rest of the ingredients ready, soak the figs and sun dried tomatoes in water so they get softer.

Put the water, oil, salt and garlic in the blender first. Mix the rest of the ingredients in a bowl and then add to blender slowly until super smooth. You can add more seasonings according to your own tastes.

You can heat it up, or use it as a 'cocktail sauce' for shrimp, or I pour it over fresh cut up zucchini and yellow squash.

YUM!

Healthy Brownies

Preheat oven to 350 degrees

3 Tbsp oil
2 eggs
1/2 cup almond meal
1/2 cup unsweetened cocoa powder
1/4 arrow root (can be found in Whole Foods in the baking section)
1/4 cup applesauce
1/8 cup raw organic honey
Can add a 1/2 mashed banana too if you want extra softness and sweetness

Mix all dry ingredients first, then add wet and mix until smooth. Pour into a greased baking pan, and cook for 15 minutes.

Surprisingly good!
